Cooking my dinner

Today is Easter.  Of course, we like to think of it as the 1st of 5 days that Pizza Zone is closed.  A day that we can totally relax and not have to worry if someone is doing something wrong, or that the place is going to burn down, or that we could be called in at any moment because it's busy.

No, instead we are getting to have a peaceful and restful day at home.

Except that Paul's not here right now......he's going to both stores.

And I have a million things to try and get done today because it's the last day of the month.  And tomorrow we have another new Pizza of the Month and I need to work all my marketing magic to get everyone to order all month.

But one thing that I am doing today is cooking an Easter dinner.  In fact, I'm going all out......and there's only 3 of us!

Menu:  Crock pot Pork Shoulder Butt Roast, Mashed Potatoes and Pork Gravy, home made creamed corn, and roasted Asparagus.  Holy cow......that's a lot of food for just 3 of us, and not sure if Paul's is still ready to eat yet (he's had the stomach flu for a couple of days now).

In fact, if all goes well........it should look something like this:

(This is a "stunt" roast.  Since I haven't cooked my roast yet, I couldn't put a picture of it here yet)

Well, my 5 minutes of free time is now up so it's necessary for me to start on my huge task list for this wonderful holiday.

Hope ya'll are having a relaxing and wonderful Easter.

P.S.S.   I am so blessed.  I don't take a single day for granted and never forget to stop and say "thank you" for what I have and this wonderful life I live.  I truly am lucky to have the family, friends, job, and husband (most importantly) that I have received.  This truly is the best time of my life.

It's fun to travel.....

But it's also so comfortable to be back home.

No more living out of a suitcase.  Or planning what you're going to do that day or where you're going to eat.  Or figuring out where you are or where you need to be.

Traveling means being a way from your "real" life and forgetting about all those things you have going on at home.  The days seem longer and you seem to have so much more energy and enthusiasm for everything.

Then you come back home and your real life is there waiting for you again.  And it doesn't take long before you are back in the "groove" of your life and slowly the excitement and fun thoughts of the trip start fading as you are back in your daily grind.

I love to travel.......but sometimes it also feels so good to be back home.

We have lots and lots of fun pictures to share from our latest journey.  The only problem?  I can't find the darn cord to download them off the camera.

Yep.......the problems of our real life have just begun!

This one is for my sister!

Yes, this one is dedicated to my sister.

She was the one bugging me today that it had been over a week since my last blog.

But do I for one minute think it's because she's interested in the adventures of my exciting life?

Heck no.  She was probably upset about the fact that I didn't have a feature blog about her on her recent birthday!

So, sorry dear sister.  I've been so busy lately that it wasn't my intent to ignore you on your birthday.  In fact, I wanted to have a surprise party for you.  But time and situations just didn't allow for it.

I'll have lots of exciting things to blog about in a few days when we get back.

Planning a trip Gainor style

Have I ever mentioned before that I LOVE to travel.  I was fortunate to marry someone who also loves to go places and see things.  However, our time certainly does not allow for us to do much of it.....but when we do, we research, research, research.

This is just a small sample of the recent research material we picked up.  There's still more at the library that I need to go pick up.

This also doesn't represent the information that we research on the internet.

But hey........planning is part of the trip process and you should have fun with every aspect of that big journey!  However, isn't it sad that the things you most enjoy you don't get to do because you are so busy?

Put the idea out there.....you never know what's going to happen

We've known for about a month that Styx was going to be coming to the Rodeo.  We have talked about it on several occasions about going.  We just never got the tickets.

Today is the day they're here.  The husband decided that we were going to go, so he got on the internet to try and negotiate some tickets.

"Fine", I said.  "You just take care of it and tell me when I need to be ready".

I already have a bunch of stuff to do today and wanted him to just take care of all it.

I did, however, post a short update on Facebook that we were looking for tickets.

And then the post came, followed by a private message that told us not to buy the tickets yet......because some might be available and we needed to wait for an hour.

10 minutes later I got the private message back that there were tickets and they were FREE, they came with the coveted parking pass, AND they were the best seats in the house......CLUB LEVEL!

Paul picked them up a short time later, since it just happened to be nearby to where he was.  We just really have to thank the friend that came through for us on this one.  So now we are headed out on a date night to the rodeo to see one of our favorite bands from the 80's!

By the way, I would like to point out that it really did end up being me that got these tickets :-)
